Simple meals to cook on Roadtrip



The meals are something very important and always a concern when you go for a roadtrip. Of course you could find awesome and fancy restaurants, but when you're traveling for more than 15 days it could become too expensive and also a bit cloying.

Thinking about that we made a selection of some simple and delicious recipes that we love and you could try! The ingredients are easy to find in every supermarket or grocery shop. Always try to find some local market with fresh supplys.

Gourmet tuna tortellini

Serves: 2
Cooks in: 25-30min
Difficulty: Super easy

Ingredients:
- A bottle of tomato sauce with olive oil, onions and pepper - ½ of the bottle;
- 1/2 package of cheese tortellini;
- 2 cans of tuna chunks in olive oil, drained;
- Capers at taste;
- Spices at taste (parsley, peppers, oregano, garlic)
- Salt;
- Emental cheese.

Directions:

Put a drizzle of olive oil from one of the tuna cans in a small pan, add 1/” botlle of tomato sauce and let it strew. Add the tuna, mix and let boil for a wile. Add a bit of water and close the pan. As soon as the water boils, add the tortellini.

Let it cook for approximately 10-12 min. Stir and cover it as you go along with the cooking. Almost at the end add the capers. Finish the plate with emental cheese sprinklet at your own taste.

Tuna and pepper wraps

Serves: 2
Cooks in: 5-7min
Difficulty: Super easy

Ingredients:
- 2 cans tuna chunks in brine, drained;
- A small jar of red pepper;
- 4 plain ready to eat white wrap bread;
- 2 grated carrots;
- Lettuce leaf
- Salt and freshly parsley;
- Squeeze of lemon.

Directions:

Heat wraps using directly the flame of a portable stove more or less 1min each side and reserve. 

Pop the tuna in a bowl and add de pepper and carrot  finely chopped.Season with lemon, salt and freshly parsley at taste. Lay the wraps on a plate.
Dollop the tuna mix on top. Fold the edges of the wrap in slightly to encase the filling, then roll up to make a fat sausage shape. Slice each wrap in half and serve.

Mediterranic Toast

Serves: 2
Prepared in: 4-8min
Difficulty: Super easy

Ingredients:
- 4 slices of rustic bread;
- A handful of watercress;
- 2 individual fresh cheese;
- 4 Cherry tomatoes;
- 2 Tomatoes
- Salt and black pepper;
- Some leafs of basil at taste;
- drizzle of olive oil.

Directions:

Toast lightly the bread using a large pan more or less 1min each side and reserve. 

Chop the tomatoes after washing them. Spread the toast with watercress previously washed and  top with tomatoes and fresh cheese cuted in slices. Finish it off with black pepper, salt at taste, the basil finely chopped and a drizzle of olive oil.
